Following meticulous production practices with select local producers, we harvest its upper stems and flowers for the highest quality and flavor. We then combine the dried thyme with sumac, toasted sesame seeds, and a pinch of salt.
A long-standing condiment of Lebanese cuisine, zaatar today has made its way into food cultures around the world. Sprinkle on chicken, vegetables or any savory meal you want to spice up. Or just add it to extra virgin olive oil for a nutty, tangy and aromatic spread.

We soak bulgur wheat in fresh goat yogurt as well as goat labneh (strained yogurt) for a sharper, richer taste. We sun dry the mixture and rub it daily. Then we gently grind it into a powder bursting with flavor and texture.
